Healthy LCM Bars

After a hit with my rice puff slice at my Yoga Pose Alignment and Adjustment Workshop. I've had special requests to share this recipe with you all.

I remember having these LCM bars as a very special treat, or only when I could afford to buy them myself. Thank you mum for making us eat healthy, most of the time ;)

So, here is the recipe I created, adjusting the original recipe on the copha packet to a slightly healthier version.

They are super simple to make and very tasty for kids and adults of all ages.

 

HEALTHY LCM BARS

INGREDIENTS:

4 Cups Rice Puffs

1 Cup Desiccated Coconut

1 Cup Coconut Sugar

3 Tablespoons Maple Syrup (or honey)

250g Copha

½ Teaspoon Vanilla Essence (optional)

METHOD:

  1. Line a square baking tray with baking paper (avoids it sticking to pan)

  2. Place copha in small saucepan to melt.

  3. Turn off heat; add honey & the vanilla to melted copha.

  4. Combine rice, coconut and coconut sugar in a large bowl and mix.

  5. Pour melted ingredients into the bowl of dry ingredients and mix well.

  6. Once combined, pour contents into a lined baking tin/container and compress firmly using an extra piece of baking paper or similar.

  7. Place in fridge to set for a couple hours or overnight.

  8. Remove from tin and cut to size.

  9. Store in an airtight container in the fridge and enjoy.

NOTES:

  • This snack is high in fat and should be eaten in moderation.

  • You can make them sweeter by adding more honey/maple.

  • Will keep well for up to a week, no longer.

  • Copha holds a lot better than coconut oil when left in room temperature upon serving
