Wild Orange, Choc Chip & Black Bean Brownies
These brownies are SO yummy! I bake them in mini muffin tins so that they are bite size for sharing at events and occasionally at my yoga classes.

The recipe is quite adaptable. So if there are things you don't like in them, you an easily swap it for something else.
So... Here is the recipe I have tweaked over the past year or more...
Wherever possible, please opt for ORGANIC!
WILD ORANGE, CHOC CHIP & BLACK BEAN BROWNIES
INGREDIENTS:
1 Can, organic Black Beans, drained and rinsed.
2 Eggs (opt for flax eggs if you are vegan - google has recipes
1/4 Cup Cacao, sifted
1/4 Cup Maple Syrup OR1 tablespoon of Jaggery dissolved in water
1/3 Cup coconut oil, melted
1/2 Teaspoon Baking powder (not soda)
OPTIONAL EXTRAS:
1/2 Cup Choc Chips (ideally no sugar added and vegan if you like)
1/2 Teaspoon Vanilla Bean
1 good pinch of Pink Salt
6-10 drops of Wild Orange Essential Oil (optional if you don't want the orange flavour) OR 1/4 Cup of Fresh Orange Juice.
Ayurvedic spices like cinnamon, cardamom and ginger are great to add in as well. If you keep the general ingredients like the beans, eggs, cacao and coconut oils the same measurements, your muffins will still work out well!
METHOD:
Preheat over to 180'C and grease muffin tins (or use patty pans)
Blend all ingredients into a food processor apart from the essential oil and chic chips.
Once ingredients have blended well, add the essential oils sparingly and taste intermittently before adding all the drops in.
Lastly add the choice chips and stir with a spatula or spoon.
Pour batter in tray until 3/4 full.
Bake in oven until skewer can be removed without batter on it. (mini muffins = approx. 8min and larger muffins = approx. 15 min)
Store in an air tight container out of direct sunlight for 5-7 days, if they last that long!

You can change it up with peppermint essential oil, lemon essential oil and others you fancy. The world is your oyster.
