BANANA PANCAKES (just 3 ingredients)

SERVES: 1 large pancake, 2 medium sized pancakes, or lots of mini pikelets


  • 1 x ripe, medium sized banana

  • 1 x egg

  • 3 x tablespoons of any flour (I used rice flour)


  1. Blitz all ingredients in a Nutribullet. You can mash it by hand. But a Nutribiullet is way quicker.

  2. Turn a fry pan onto a medium heat

  3. Drizzle with any oil of your choice. I used flaxseed oil

  4. See notes 1 & 2 below, for more details on different flours being used.

  5. Pour batter into pan, making any size you like

  6. Eat while warm. Or allow to cool before freezing


I baked these into golf ball sized circles and then put them in pairs in the freezer for my 9 month old.

If doing this, you can easily defrost them in the microwave for 30 seconds (give or take). Or leave in the fridge overnight to defrost organically.


NOTE:

  1. If using almond meal, coconut flour, rice flour or similar, it's a good idea to blitz the mixture and then let it sit for 5-10 minutes while the 'flour' absorbs some of the egg/banana moisture.

  2. You can also add some baking powder and/or bicarb soda for extra fluffiness. (1/4 teaspoon of each powder. Or 1/2 a teaspoon of one or the other powder)


Most importantly, enjoy making them, then eating them!!
