Lemon Bliss Balls

These bliss balls were a big hit at my yoga class last week. (Yep, everyone who comes to my classes get a complimentary bliss balls as they leave). So I thought I’d share the recipe with you all.


This recipe is SO simple, healthy & energising.


INGREDIENTS

2 cups shredded coconut

2 cups cashews, soaked overnight

10 drops of pure lemon essential oil

5-10 fresh dates (more = sweeter)

Pinch of salt


METHOD


  1. Ideally soak the cashews over night in water. Or if you’re not so prepared. Soak them in boiling water for 1-hr minimum.

  2. Ensure you’ve removed the pots from the dates. If you need to use dried dates, you can. Just soak 10 dried, pitted dates with the cashews over night.

  3. Drain the cashews and add ALL of the ingredients into the food processor.

  4. Blitz until well mixed and not too chunky.

  5. Roll into balls. No larger than a golf ball.

  6. Optional extra, roll the bliss balls in more coconut as pictured.

  7. Store in the fridge in an air tight container and eat within 7 days.


NOTE:

If the mixture is too tacky. Add more shredded coconut, until you get a good consistency. It should told together quite easily.
